Our typical products of Veneto, where a flower is enhanced: Treviso chicory, a gem of our kitcens. In the times it has become remarkable, and in the past it was used like a ornamental plant on patrician gardens. During the time Treviso chicory has become an important ingredient of this season and known in all the world. In Veneto there are three different kind of this chicory, and just one is famous for all uses and it is known like “Radicchio Spadone”. It’s good to taste raw in the
salad, stewed, fried and grilled. This chicories are a result of the peasants. All the variety are a delicacy for everyone, matching a good wine.
In this period I propose a good recipies: risotto with Amarone wine. For me is a delicious dish because I put together different products of thi region. An elegant wine, unique in the world, important to keep the colour of Treviso chicory and the taste of that. This two ingredient is perfect for prepare an easy but tasty dish.
